Blueberry Banana Chia Pancakes

Ingredients

• 1 ripe banana, mashed
• 1 egg
• 1/2 cup milk
• 1/2 cup flour (gluten-free if needed)
• 1 tbsp peanut butter powder
• 1 tbsp chia seeds
• 1/2 tsp cinnamon
• 1/2 tsp baking powder
• Pinch of salt
• 1/2 cup blueberries

Instructions

1. Make batter

  1. In a bowl, mash banana until smooth.

  2. Whisk in egg and milk.

  3. Add flour, peanut butter powder, chia seeds, cinnamon, baking powder, and salt.

  4. Mix until just combined.

  5. Gently fold in blueberries.

2. Cook pancakes

  1. Heat a nonstick pan over medium heat and lightly spray with oil.

  2. Pour batter into small pancakes.

  3. Cook for 2–3 minutes per side, until golden and cooked through.

3. Serve

  1. Stack pancakes and drizzle with maple syrup. Turkey bacon pairs so well with this & adds protein !!

  2. Sprinkle extra cinnamon or chia seeds if desired.
